Roast herb chicken and veggies
This, I have to practice. Though I’ve perfected roasting and grilling quarter cuts of chicken legs, and have actually roasted whole chickens a couple of times before with the help of our nanny in my mom’s house, I had quite a difficult time getting this particular bird done right last night. I’m not even sure where I went wrong, I consulted about a dozen recipes before I started prepping everything. Hmm. Could’ve been the oven (but I had an oven thermometer), or the chicken (but I defrosted it well) or it really could’ve been just me :( Oh well, practice makes perfect. Bring in the birds.
