Who knew that adding those simple ingredients could totally, TOTALLY make a plain, old chicken adobo so much better???? Seriously love it. love love love it :)

Dinner, Feb 1. Curry pork in ginger-pineapple sauce
Took me about ten minutes to think of a title for this dish without sounding like an ingredient list. Googled “curry pork with pineapple” to see if there’s a similar one out there, and turns out there is - in Masterchef Australia… JUNIOR Masterchef Australia! :) Right. My level of freestyle cookery is good enough to join in the junior division :D
