Lunch, Jan 14. Pulled pork tacos with homemade salsa
Hi all! I’m happy that I got to use our DSLR again today, look at that pretty (and yummy!!) picture :) I’ve learned that with all the supermom roles I have to do, Instagram is a big help in keeping my blog updated. Apologies on that as sometimes (okay, most of the time) I really don’t have time to run and get our camera when our baby is perched on her high chair while I’m still feeding her big sister her breakfast :$ Good thing my iPhone is almost always within reach :) Anyway, happy Monday to you all! Breakfast, July 16. Sunny side up egg and cheesy prata quesadillas topped with homemade salsa and sour cream
Finishing off the last remaining pratas so I’ll have space in the freezer for when my brother brings home a big, new bag. Yey! Frozen roti pratas are love :)
Dinner, Sept 28.
Nachos with fresh, homemade salsa and ground beef, chicken wings, carbonara pasta and peppered beef and sausage
Prepared a simple feast for our little zooey’s 2nd birthday today, just for a little get together with relatives. Happiest birthday to the sweetest rockstar ever!! :D we love you so much!!
Dinner, Aug 4.
Build-your-own-burrito: Roasted chicken, salsa rice, cabbage, cucumber, salsa, cheesy spinach dip, garlic sauce, nachos and homemade tortillas
Made everything from scratch except for the nachos, and I’ll probably never do that again unless I have to! Although I made the salsa and spinach dip ahead of time, I was still exhausted by the time I finished preparing and grilling and setting up everything else. It’s not as simple as it looks - prep time was really long (I blame the tortillas). Well, now at least I know I can make all those :) Good thing Gary invited his friends over and we got to share this fantastic labor of love. Nom nom nom nom, delicioso!
